Super Speedy Sea Bass Ceviche

This is a really summery dish, which packs a punch in the flavour department, looks beautiful and is healthy too.

2 sea bass fillets – pin-boned and skin removed
2 red chillies
Juice of two limes
Coriander
1/2 red onion or 3/4 spring onions
1/2 pepper of any colour
Salt and pepper
Olive oil
Tortilla chips

Method: Deseed the chillies and cut into small pieces. Do the same with the red onion or spring onions and pepper. Cut the sea bass into small, bitesize pieces and place in a bowl. Then squeeze over the lime juice and allow it to sit for a few minutes. Chop a handful of coriander while you wait. Then add all of the ingredients to the fish in the bowl and mix well. Add salt and pepper and a dizzle of olive oil. Then serve on its own or with some tortilla chips. If you’re worried about eating raw fish you can leave the sea bass until its white and ‘cooked’ but it’s more tender and flavoursome if you just leave it for a few minutes.
